I really don't enjoy cooking.  It's one area of my life where I feel really insecure, and my fussy children don't help to boost my confidence in the kitchen.  I'll try out a new recipe, work really hard on it, and it's met with "yuck - can I have spaghettio's instead???"  So I was initially a little hesitant to try a recipe that was stuck on the top of a jar of Ragu that I got during an Extra Bucks deal at CVS a few weeks ago.

But "Mama's Best Spaghetti and Meatballs" sounded really easy.  My family likes spaghetti, but I'll admit I've never made meatballs before.  I don't use ground beef, hence the ground turkey I got at Shoprite today.  All I needed was 1 lb. of ground turkey, 1/2 cup of Italian seasoned bread crumbs, 1 jar of Ragu, and 1 egg.  And spaghetti, of course.  I used Ronzoni Garden Delight from my stockpile.

First, I cooked the spaghetti.  Easy.
Then I mixed one egg, 1/2 cup of Italian seasoned bread crumbs, and the 1 lb. of ground turkey together.  Shaped it into about 12 meatballs.
Then in a separate pot, I boiled the Ragu sauce.  Dropped in the meatballs, covered, and reduced to simmer for 20 minutes.

Poured it over the spaghetti and Done!  I was hoping for a meatball sandwich for lunch tomorrow, but there are NO leftovers - a sure sign that this recipe is a winner, even in my house o' picky eaters!  And nobody asked for spaghettio's tonight!

  1. Hey, good for you for trying making meatballs for the 1st time!! Isn't it grand when something works out? And just think of how much better it is that you can control what goes into them AND that they are most cost-effective for your budget. ;-)

I have always pan sauteed my meatballs before adding to the sauce....reducing it all by 1 step sounds great to me.lol
And the next time you make meatballs try adding finely diced onions & grated cheese to the meat mixture if your eaters like onion flavor &/or cheese flavor.

  2. Thanks! I couldn't believe how easy it was. Maybe now I'll get up the nerve to try something a little more challenging!!

  3. Sounds delicious! I'm not big on cooking either, so I feel your pain. If you feel adventureous and like spinach, this is a tasty and pretty simple recipe: http://www.foodnetwork.com/recipes/rachael-ray/florentine-meatballs-recipe/index.html. I usually skip the sauce, and just make the meatballs by themselves and eat them with some pasta on the side. Yummo! :)

  4. Thanks, frugalsuz! I'll have to try that. I'm always trying to find ways to get my kids to eat more veggies. It's an endless battle!

  5. Getting kids to eat veggies w/out knowing it?
I was the master of that!lol
Next time you make spaghetti sauce, grate up carrots and add it. Not only do they get veg but the carrots sweeten the sauce so they may eat more of it.lol
If you make smoothies for them, grate some carrots into that too...between the grating and the blending you'll be able to hide the veg.

And the next time you make meatballs or meatloaf, grate up carrots, zucchini, squash or all 3. Mix into the meatloaf. Unless they sit and 'examine' the food, they'll never taste the veggies.

Jerry Seinfeld's wife wrote a book about hiding veggies in food to get your kids to eat them...see if your library has it to lend so you can copy the recipes out of it. ;-)

  6. Slugmama, thanks for the ideas! I've heard about Seinfeld's wife's book. I'll have to see if the library has it. Hope it helps!
